Seared Tuna with Wasabi Mayo

Sesame-crusted tuna seared briefly and served with a creamy, tangy wasabi mayonnaise.

Instructions

  1. Step 1

    Whisk the mayonnaise, wasabi paste, lime juice, soy sauce, and sesame oil until smooth. Set the wasabi mayo aside.

    Ingredients used: 15.0 ml Lime Juice, 120.0 gr Mayonnaise, 5.0 ml Sesame Oil, 10.0 ml Soy Sauce, 15.0 gr Wasabi Paste

    Cookware: small bowl, whisk

  2. Step 2

    Pat the tuna dry. Season it with the salt and black pepper, then press the sesame seeds onto the broad sides.

    Ingredients used: 1.0 gr Ground Black Pepper, 3.0 gr Salt, 9.0 gr Sesame Seed, 600.0 gr Tuna

  3. Step 3

    Heat the skillet over high heat. Add the canola oil and heat until it shimmers.

    Timer: 1 min (fixed)

    Ingredients used: 15.0 ml Canola Oil

    Cookware: large skillet

  4. Step 4

    Sear the tuna for 45 to 60 seconds on each broad side, then briefly sear the edges. For fully cooked tuna, continue cooking until the center reaches 63°C.

    Timer: 3 min (fixed)

    Cookware: instant-read thermometer, large skillet, tongs

  5. Step 5

    Transfer the tuna to a clean cutting board and let it rest.

    Timer: 3 min (fixed)

  6. Step 6

    Slice the tuna across the grain. Plate it with the wasabi mayo and finish with the scallions.
