Sesame Crusted Tuna Steaks

Tuna steaks coated with sesame seeds, quickly pan-seared, and served with a ginger-soy dipping sauce.

Instructions

  1. Step 1

    Whisk 2 tbsp (30 ml) soy sauce with the rice vinegar, sesame oil, honey, and ginger. Set the dipping sauce aside.

    Ingredients used: 8.0 gr Ginger, 10.0 gr Honey, 15.0 ml Rice Vinegar, 10.0 ml Sesame Oil, 30.0 ml Soy Sauce

    Cookware: mixing bowl, whisk

  2. Step 2

    Pat the tuna steaks dry. Brush them with the remaining 1 tbsp (15 ml) soy sauce, then season all sides with the salt and black pepper.

    Ingredients used: 2.0 gr Ground Black Pepper, 3.0 gr Salt, 15.0 ml Soy Sauce, 680.0 gr Tuna

  3. Step 3

    Spread the sesame seeds over a shallow plate. Press every broad face and edge of each tuna steak into the seeds to form an even crust.

  4. Step 4

    Place a large skillet over medium heat. Add the neutral oil and heat until it shimmers.

    Timer: 2 min (fixed)

    Ingredients used: 30.0 ml Vegetable Oil

  5. Step 5

    Add the tuna with tongs and sear each broad side for 1 to 2 minutes, then briefly sear the edges. For fully cooked tuna, continue cooking until the center reaches 63°C.

    Timer: 5 min (fixed)

    Cookware: instant-read thermometer, skillet, tongs

  6. Step 6

    Rest the tuna for 3 minutes on a clean cutting board. Slice across the grain with a clean knife and serve with the prepared dipping sauce.
