Seared Tuna Steak with Sesame

Sesame-crusted tuna steaks quickly seared and served with a bright ginger, garlic, soy, and lime dipping sauce.

Instructions

  1. Step 1

    Whisk the soy sauce, lime juice, toasted sesame oil, ginger, and garlic together. Set the dipping sauce aside.

    Ingredients used: 4.0 gr Garlic, 8.0 gr Ginger, 15.0 ml Lime Juice, 10.0 ml Sesame Oil, 30.0 ml Soy Sauce

    Cookware: mixing bowl, whisk

  2. Step 2

    Combine the sesame seed and black pepper on a plate. Pat the tuna dry, then press its broad surfaces and edges into the coating.

    Ingredients used: 1.0 gr Ground Black Pepper, 24.0 gr Sesame Seed, 2.0 piece Tuna

    Cookware: plate

  3. Step 3

    Heat the heavy skillet over high heat for 2 minutes. Add the neutral oil and swirl to coat the skillet.

    Timer: 2 min (fixed)

  4. Step 4

    Add the coated tuna and sear each broad side for 60 to 90 seconds, then briefly sear the edges. For fully cooked tuna, reduce to medium heat after browning and continue cooking until the center reaches 63°C.

    Timer: 4 min (fixed)

  5. Step 5

    Transfer the tuna to a clean cutting board and rest it for 3 minutes.

    Timer: 3 min (fixed)

  6. Step 6

    Slice the tuna across the grain and serve immediately with the dipping sauce.
