Pat the scallops thoroughly dry, then season them evenly with the salt and black pepper.

Heat the skillet over high heat. Add the vegetable oil and heat until it shimmers.

Arrange the scallops in one layer with space between them. Sear without moving until deeply golden underneath.

Turn the scallops with tongs and reduce to medium heat. Add the butter and garlic, then spoon the foaming garlic butter over the scallops until their centers reach 63°C.

Remove the skillet from the heat. Add the lemon juice and parsley, spoon the sauce over the scallops, and transfer them to a clean plate for immediate serving.
