Salmon and Broccoli Bake
A creamy baked casserole of tender salmon and broccoli topped with cheddar and crisp breadcrumbs.
Instructions

Step 1
Preheat the oven to 200°C. Grease a medium baking dish with the olive oil.

Bring a large pot of water to a boil. Add the broccoli, cook for 3 minutes, then drain thoroughly.

Arrange the salmon and drained broccoli in the prepared baking dish. Season the salmon with ⅜ tsp salt and the black pepper.

Melt the butter in a saucepan over medium heat. Add the garlic and cook for 30 seconds.

Stir in the flour and cook over medium heat for 1 minute.

Gradually whisk in the milk. Bring to a gentle simmer over medium heat and cook, whisking often, until thickened.

Remove the saucepan from the heat. Stir in 90 gr cheddar cheese, the Dijon mustard, lemon zest and juice, and ⅝ tsp (4 gr) salt until smooth.

Pour the cheese sauce evenly over the salmon and broccoli.

Combine the breadcrumbs with 30 gr cheddar cheese, then scatter the mixture evenly over the casserole.

Bake at 200°C until the topping is golden, the sauce is bubbling, and the center of the largest salmon piece reaches 63°C.

Let the bake rest before serving.
