Saganaki Shrimp in Tomato Sauce
Greek-style shrimp simmered in a savory tomato and white wine sauce, finished with feta cheese and fresh parsley.
Instructions

Step 1
Pat the shrimp dry and place them in a mixing bowl. Season with ⅜ tsp (2 gr) salt and the black pepper.

Heat the olive oil in a skillet over medium heat. Add the onion and cook until soft and translucent.

Add the garlic, tomato paste, oregano, and red pepper flakes. Stir until the tomato paste darkens slightly and smells fragrant.

Pour in the white wine and simmer over medium heat, scraping up any browned bits, until reduced by about half.

Stir in the tomatoes and the remaining ⅝ tsp (3 gr) salt. Simmer over medium heat until the sauce thickens slightly.

Add the seasoned shrimp to the sauce in an even layer. Simmer over medium heat, turning once, until opaque and the centers reach 63°C.

Scatter the feta over the shrimp and let it warm gently in the sauce.

Remove the skillet from the heat, sprinkle with parsley, and serve immediately.
