Mushroom Stroganoff with Pasta
A creamy mushroom and sour cream sauce flavored with paprika, mustard, and parsley, tossed with short pasta.
Instructions

Step 1
Prepare the sliced mushroom, chopped onion, minced garlic, and chopped parsley. Bring a large pot of water to a boil.

Add 1 tsp (6 gr) salt to the boiling water and cook the pasta until al dente according to its package timing. Drain well.

Heat the olive oil and 1 tbsp (15 gr) butter in a large skillet over high heat. Add the mushrooms and cook until browned and their released liquid has evaporated, then transfer them to a bowl.

Reduce to medium heat and melt the remaining 1 tbsp (15 gr) butter in the skillet. Add the onion and cook until soft and lightly golden.

Add the garlic and paprika, stir briefly, then add the flour and cook while stirring until no dry flour remains.

Gradually whisk in the vegetable stock, then stir in the mustard, the remaining ½ tsp (3 gr) salt, and the black pepper. Bring to a gentle simmer over medium heat.

Cook the sauce until lightly thickened, stirring occasionally.

Reduce to low heat. Return the cooked mushrooms to the skillet, stir in the sour cream and lemon juice, and heat gently until the sauce is steaming without boiling.

Add the drained pasta and toss until evenly coated and hot. Fold in the parsley and serve immediately.
