Bulgarian Potato and Cheese Pie
A crustless Rhodope-style patatnik made with grated potatoes, Bulgarian white brined cheese, onion, eggs, and dried mint, baked until crisp and golden.

Step 1
Heat the oven to 200°C. Brush the baking dish with half of the sunflower oil.

Coarsely grate the potatoes into the mixing bowl.

Toss the grated potatoes with the salt and leave them for 10 minutes. Squeeze out and discard as much released liquid as possible, then return the potatoes to the bowl.

Heat the remaining sunflower oil in the frying pan over medium heat. Add the onion and cook until softened and lightly golden.

Whisk the eggs in the small bowl, then stir in the crumbled cheese, mint, and black pepper.

Add the cooked onion and egg-cheese mixture to the potatoes. Fold until evenly combined.

Spread the potato mixture evenly in the prepared baking dish, pressing it into a compact layer. Dot the surface with the butter.

Bake at 200°C until deeply golden, the potatoes are tender, and the center reaches 74°C.

Rest the pie for 10 minutes before cutting it into wedges and serving.
