Vegan Mushroom Stroganoff
A creamy, savory mushroom stroganoff with wide egg-free pasta, plant-based sour cream, paprika, mustard, and fresh parsley.

Bring a large pot of water to a boil over high heat.

Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened and lightly golden.

Add the mushrooms and cook over high heat, stirring occasionally, until their liquid evaporates and the edges brown.

Reduce to medium heat. Add the garlic, paprika, thyme, and black pepper, then stir until fragrant.
