Mocha Protein Bars

No-bake oat and whey protein bars flavored with cocoa and coffee, finished with a thin dark chocolate topping.

Instructions

  1. Step 1

    Line a 20 cm square baking pan with parchment paper, leaving enough overhang to lift out the bars.

  2. Step 2

    Whisk the oats, whey protein powder, cocoa powder, instant coffee, and salt together in a large mixing bowl.

    Ingredients used: 30.0 gr Cocoa Powder, 6.0 gr Instant Coffee, 180.0 gr Rolled Oat, 1.0 gr Salt, 120.0 gr Whey Protein Powder

    Cookware: mixing bowl, whisk

  3. Step 3

    Add the peanut butter, honey, milk, and vanilla extract. Stir until no dry pockets remain and a thick, cohesive mixture forms.

    Ingredients used: 120.0 gr Honey, 120.0 ml Milk, 180.0 gr Peanut Butter, 5.0 ml Vanilla Extract

    Cookware: mixing bowl, rubber spatula

  4. Step 4

    Transfer the mixture to the lined pan and press it firmly into an even layer.

  5. Step 5

    Place the dark chocolate and coconut oil in a microwave-safe bowl. Microwave in 20-second intervals, stirring after each interval, until smooth.

    Timer: 2 min (fixed)

    Ingredients used: 10.0 ml Coconut Oil, 80.0 gr Dark Chocolate

    Cookware: Microwave, microwave-safe bowl, rubber spatula

  6. Step 6

    Spread the melted chocolate evenly over the pressed bar mixture.

  7. Step 7

    Refrigerate at 4°C or colder until the bars are firm and the topping is set.

    Timer: 60 min (fixed)

  8. Step 8

    Lift the slab from the pan using the parchment overhang and cut it into 12 bars.
