Melomakarona Honey Cookies
Classic Greek orange-spiced cookies baked until golden, soaked in honey syrup, and finished with chopped walnuts.
Instructions

Step 1
Combine the water, lemon juice, and 1 ½ cup (300 gr) of the sugar in a saucepan. Bring to a boil over medium heat, then simmer for 3 minutes.

Remove the syrup from the heat and stir in the honey until dissolved. Set aside to cool to room temperature.

Heat the oven to 180°C. Line two baking sheets with baking paper.

Whisk the olive oil, sunflower oil, ½ cup (100 gr) of the sugar, and orange zest in a mixing bowl. Stir the baking soda into the orange juice, then whisk the foaming mixture into the oils.

In a second mixing bowl, whisk together the flour, semolina, baking powder, salt, 1 ⅛ tsp (3 gr) of the cinnamon, and the clove.

Fold the dry mixture into the oil mixture just until a soft, cohesive dough forms.

Divide the dough into 30 portions and shape each into a compact oval. Arrange them on the prepared baking sheets with space between them.

Press the tines of a fork lightly across each cookie to make shallow ridges.

Bake at 180°C until the cookies are deep golden and firm at the edges, 20–24 minutes.

While the cookies are still hot, lower them into the cooled syrup in batches. Soak each batch for 15–20 seconds, turn once, then transfer the cookies to a wire rack with a slotted spoon.

Combine the walnuts with the remaining ⅜ tsp (1 gr) of cinnamon and sprinkle over the syrup-coated cookies. Let the cookies cool completely before serving.
