Mango Chia Seed Pudding

A creamy chilled chia pudding made with ripe mango and coconut milk, lightly sweetened and brightened with lime.

Instructions

  1. Step 1

    Blend the mango, coconut milk, maple syrup, lime juice, vanilla extract, and salt until completely smooth.

    Timer: 1 min (fixed)

    Ingredients used: 400.0 ml Coconut Milk, 15.0 ml Lime Juice, 350.0 gr Mango, 30.0 ml Maple Syrup, 0.5 gr Salt, 5.0 ml Vanilla Extract

    Cookware: blender, rubber spatula

  2. Step 2

    Pour the mango mixture into the mixing bowl. Add the chia seeds and whisk until evenly dispersed.

  3. Step 3

    Let the mixture stand for 10 minutes, then whisk again to break up any chia seed clumps.

    Transfer the pudding to a lidded container, cover, and refrigerate until thick and fully chilled.
