No-bake date and cashew energy balls flavored with fresh lemon and coated in shredded coconut.

Instructions

  1. Step 1

    Put the cashews in the food processor and pulse until they resemble coarse crumbs.

    Add the dates, 50 gr of coconut, lemon juice, lemon zest, maple syrup, coconut oil, vanilla extract, and salt. Process until the mixture is evenly combined and holds together when pressed.

    Ingredients used: 15.0 ml Coconut Oil, 180.0 gr Date, 1.0 gr Fine Salt, 30.0 ml Lemon Juice, 6.0 gr Lemon Zest, 30.0 ml Maple Syrup, 50.0 gr Unsweetened Shredded Coconut, 5.0 ml Vanilla Extract

  3. Step 3

    Transfer the mixture to a mixing bowl and refrigerate until firm enough to shape.

  4. Step 4

    Divide the chilled mixture into 14 equal portions and roll each portion into a ball.
