Herbed Feta Phyllo Triangles

Crisp, golden phyllo pastries filled with feta, fresh herbs, green onion, garlic, and lemon zest.

Instructions

  1. Step 1

    Heat the oven to 190°C. Line a baking sheet with parchment paper.

  2. Step 2

    Chop the parsley, dill, and mint; slice the green onion; mince the garlic; and finely grate the lemon zest. Combine them in a mixing bowl with the feta, egg, and black pepper, mixing with a fork until evenly distributed.

    Ingredients used: 1.0 piece Egg, 200.0 gr Feta Cheese, 10.0 gr Fresh Dill, 5.0 gr Fresh Mint, 5.0 gr Garlic, 1.0 gr Ground Black Pepper, 1.0 piece Lemon, 15.0 gr Parsley, 40.0 gr Scallion

    Cookware: Chef Knife, cutting board, Fine grater, fork, mixing bowl

  3. Step 3

    Lay one phyllo sheet on the work surface and brush it lightly with butter. Top with a second sheet, brush again, and cut lengthwise into three equal strips. Repeat with the remaining sheets and butter to make 12 double-layer strips.

    Ingredients used: 70.0 gr Butter, 200.0 gr Phyllo Dough

  4. Step 4

    Divide the filling evenly among the bottoms of the strips. Fold one lower corner diagonally over the filling, then continue folding the strip over itself in a flag-style pattern to form a sealed triangle. Place seam-side down on the prepared baking sheet.

  5. Step 5

    Bake at 190°C until the triangles are crisp and deep golden, and the filling reaches 74°C, 18 to 22 minutes. Cool on the baking sheet for 5 minutes before serving.
