Cinnamon Roll
Soft, spiraled yeast rolls with a buttery cinnamon-brown sugar filling and cream cheese frosting.
Instructions

Step 1
Warm the milk in a saucepan to 38–43°C. Transfer it to a mixing bowl, whisk in the yeast and granulated sugar, and leave until lightly foamy.

Whisk the eggs and 4 ¼ tbsp (60 gr) of melted butter into the yeast mixture.

Add the flour and salt. Stir until a rough dough forms.

Knead the dough on a clean surface until smooth and elastic. Return it to the bowl, cover, and let it rise until doubled in volume.

Combine the brown sugar and cinnamon in a mixing bowl.

Roll the risen dough into an approximately 45-by-30 cm rectangle. Spread 6 tbsp (85 gr) of softened butter evenly over it, then cover it with the cinnamon-sugar mixture.

Roll the dough tightly from one long side and pinch the seam closed. Cut it into 12 equal rolls and arrange them in a baking-paper-lined baking dish.

Cover the rolls and let them rise until visibly puffy.

Preheat the oven to 190°C.

Bake the rolls until golden brown and the center of a middle roll reaches at least 88°C.

Beat the cream cheese, powdered sugar, vanilla, and the remaining 1 ¾ tbsp (25 gr) of softened butter until smooth.

Let the baked rolls cool briefly, then spread the frosting over the warm rolls and serve.
