Apple Cider Donuts
Classic American cake-style donuts flavored with reduced apple cider and warm spices, deep-fried and coated in cinnamon sugar.

Step 1
Bring the apple cider to a steady simmer in the saucepan over medium heat. Cook until reduced to 120 ml.

Transfer the reduced cider to the liquid measuring cup and let it cool until lukewarm.

Whisk 3 ¼ cup (400 gr) flour with the baking powder, baking soda, 1 ½ tsp (4 gr) cinnamon, nutmeg, and salt in the large mixing bowl.

In the medium mixing bowl, whisk ½ cup (120 gr) granulated sugar with the brown sugar, eggs, melted butter, vanilla extract, and cooled reduced cider until smooth.

Fold the wet mixture into the dry mixture just until a soft, evenly moistened dough forms. Cover and refrigerate until firm enough to roll.

Dust the work surface and rolling pin with the remaining 2 ¾ tbsp (20 gr) flour. Roll the chilled dough 12 mm thick, cut 12 donuts, and place them and their holes on the baking sheet.

Stir the remaining ½ cup (100 gr) granulated sugar and 1 ½ tsp (4 gr) cinnamon together in the shallow bowl.

Pour the vegetable oil into the deep pot and heat it over medium heat to 175°C, monitoring the temperature with the thermometer.

Fry two or three donuts at a time, turning once, until deep golden brown, about 1–2 minutes per side. Fry the holes in the same way, then transfer everything to the wire rack.

Let each donut drain for about 1 minute, then coat it on both sides in the prepared cinnamon sugar. Serve warm or cool completely on the wire rack.
