Cheesy Cauliflower Bites

Baked, bite-size cauliflower snacks with cheddar, Parmesan, and a crisp breadcrumb coating.

Instructions

  1. Step 1

    Heat the oven to 220°C. Line a baking sheet with parchment paper and brush it with the olive oil.

    Ingredients used: 15.0 ml Olive Oil

  2. Step 2

    Place the cauliflower in a steamer basket over simmering water. Cover and steam until just tender.

    Timer: 7 min (fixed)

    Ingredients used: 500.0 gr Cauliflower

    Cookware: fork, saucepan, steamer basket

  3. Step 3

    Let the cauliflower cool briefly, then chop it into rice-size pieces. Wrap it in a clean kitchen towel and squeeze out as much moisture as possible.

    Timer: 5 min (fixed)

  4. Step 4

    Crack the eggs into a mixing bowl and beat them with a fork. Add the prepared cauliflower, cheddar, Parmesan, breadcrumbs, garlic powder, onion powder, salt, and black pepper; mix thoroughly.

    Ingredients used: 1.0 gr Black Pepper, 60.0 gr Breadcrumb, 120.0 gr Cheddar Cheese, 2.0 piece Egg, 4.0 gr Fine Salt, 3.0 gr Garlic Powder, 3.0 gr Onion Powder, 30.0 gr Parmesan Cheese

  5. Step 5

    Divide the mixture into 24 portions. Compress each portion firmly into a small oval bite and arrange them on the prepared baking sheet.

  6. Step 6

    Bake at 220°C until the undersides are golden and the bites are beginning to firm.

    Timer: 12 min (fixed)

  7. Step 7

    Turn the bites carefully with a spatula, then bake until browned, firm in the center, and at least 74°C internally.

  8. Step 8

    Rest the bites on the baking sheet before serving warm.
