Cauliflower Mac and Cheese
Tender cauliflower florets coated in a creamy cheddar sauce and baked with a crisp Parmesan breadcrumb topping.
Instructions

Step 1
Heat the oven to 200°C. Set out a baking dish.

Steam the cauliflower over simmering water until just tender, then let it drain briefly.

Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook until smooth and lightly bubbling.

Gradually whisk in the milk. Cook over medium heat, whisking frequently, until the sauce thickens.

Whisk the Dijon mustard, garlic powder, salt, and black pepper into the sauce.

Reduce to low heat and add the cheddar. Stir until melted, then remove the sauce from the heat.

Place the steamed cauliflower in a large mixing bowl and fold in the cheese sauce. Transfer the mixture to the baking dish.

Combine the breadcrumbs and Parmesan in a small mixing bowl.
