Cheesy Cauliflower Casserole
Tender cauliflower baked in a creamy cheddar sauce with a crisp Parmesan breadcrumb topping.

Step 1
Preheat the oven to 200°C and set out a baking dish.

Trim the cauliflower and cut it into evenly sized, bite-size florets.

Bring a large pot of water to a boil over high heat. Add the cauliflower, reduce to medium heat, and cook until barely tender.

Drain the cauliflower thoroughly and let it release steam while the sauce is prepared.

Melt the butter in a medium saucepan over medium heat. Whisk in the flour and cook until smooth and lightly foaming.

Gradually whisk in the milk. Cook over medium heat, whisking frequently, until the sauce is smooth and thick enough to coat the whisk.

Reduce to low heat and stir in the cheddar cheese, Dijon mustard, salt, and ground black pepper until smooth. Remove the sauce from the heat.

Combine the breadcrumb and Parmesan cheese in a small bowl.

Spread the drained cauliflower in the baking dish and pour the cheese sauce evenly over it.
