Cauliflower Pizza with Vegetable Toppings
A cauliflower-and-cheese pizza crust topped with tomato sauce, sautéed vegetables, mozzarella, and fresh basil.

Preheat the oven to 220°C. Line a baking sheet with parchment paper.

Pulse the cauliflower in batches until it resembles coarse crumbs.

Transfer the processed cauliflower to a microwave-safe bowl, cover loosely, and microwave until tender.

Let the cauliflower cool briefly, then wrap it in a clean kitchen towel and squeeze firmly to remove as much liquid as possible.

Combine the dried cauliflower with the eggs, the crust portion of mozzarella, Parmesan, the crust portion of oregano, salt, and black pepper.

Press the cauliflower mixture onto the prepared baking sheet in an even round about 30 cm wide, keeping the edge slightly thicker.

Bake until the crust is firm and deeply golden around the edges.

Heat the olive oil in a skillet over medium heat. Add the bell pepper, mushrooms, red onion, zucchini, and the vegetable portions of salt and black pepper; cook until tender and the released liquid has evaporated.

Spread the tomato sauce over the baked crust, leaving a narrow border. Sprinkle with the remaining oregano and mozzarella, then distribute the cooked vegetables evenly over the top.

Return the pizza to the oven and bake until the mozzarella has melted and begun to brown.

Scatter the basil over the pizza. Rest briefly before slicing and serving.
