Instructions

    Heat the olive oil in the skillet over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until beginning to soften.

    Add the zucchini, corn, garlic, ground cumin, smoked paprika, and salt. Cook over medium heat until the vegetables are tender and excess moisture has evaporated.

    Transfer the vegetable filling to the mixing bowl, stir in the cilantro, and let it cool slightly.

    Lay out four tortillas. Distribute half of the cheese over them, add the vegetable filling, cover with the remaining cheese, and top with the other four tortillas.
