Mini Veggie Pizza
Eight individual pizzas with a tender homemade crust, seasoned tomato sauce, mozzarella, and colorful vegetable toppings.
Instructions

Step 1
Combine the flour, yeast, and salt in a large bowl. Stir in the water and 1 tbsp (15 ml) olive oil until a rough dough forms.

Knead the dough on a clean surface until smooth and elastic.

Return the dough to the bowl, cover it, and leave it in a warm place until nearly doubled in size.

Mix the crushed tomatoes, garlic, oregano, remaining salt, and remaining 1 tsp (5 ml) olive oil to make the sauce.

Prepare the bell pepper, mushrooms, red onion, and olives as noted in the ingredient list.

Heat the oven to 230°C and line two baking sheets with parchment paper.

Divide the risen dough into 8 equal pieces. Roll each piece into a round about 12 cm wide and arrange the rounds on the prepared baking sheets.

Spread the prepared tomato sauce over the dough rounds, leaving the rims exposed. Top evenly with the mozzarella, bell pepper, mushrooms, red onion, and olives.

Bake at 230°C until the crusts are golden underneath and the cheese is melted and bubbling.

Transfer the pizzas to a cooling rack and let them stand briefly before serving.
