Vegetable Pot Pie with Herb Crust
A savory pot pie filled with tender vegetables in a creamy herb sauce and topped with a flaky parsley-thyme crust.
Instructions

Step 1
Combine 1 ¾ cup (220 gr) all-purpose flour, ⅜ tsp (2 gr) salt, the parsley, and 2 gr thyme in a mixing bowl.

Rub 9 ½ tbsp (120 gr) butter into the dry ingredients until coarse crumbs form. Mix in the water just until the dough holds together, shape it into a disk, and refrigerate.

Preheat the oven to 200°C and place a rimmed baking sheet inside to heat.

Heat the olive oil in a large skillet over medium heat. Add the onion, carrot, and celery and cook, stirring occasionally, until they begin to soften.

Add the mushrooms and cook over medium heat until their released moisture has mostly evaporated.

Stir in the garlic and the remaining 1 ¼ tbsp (3 gr) thyme and cook until fragrant.

Add the remaining 2 ½ tbsp (30 gr) butter. Once melted, stir in the remaining 30 gr all-purpose flour and cook over medium heat.

Gradually whisk in the vegetable stock, then add the potato. Bring to a gentle simmer over medium heat and cook until the potato is nearly tender.

Stir in the milk, peas, remaining ⅝ tsp (3 gr) salt, and black pepper. Simmer over low heat until the sauce is thick and the vegetables are tender, then transfer the filling to the pie dish.

Roll the chilled dough into a circle slightly wider than the pie dish. Lay it over the filling, trim or fold the edge, seal it against the rim, and cut several steam vents in the center.

Brush the crust evenly with the beaten egg.

Set the pie dish on the heated baking sheet and bake at 200°C until the crust is deeply golden and the filling bubbles at the vents. Rest before serving.
