Baked Spinach and Artichoke Pasta
A creamy baked pasta with spinach, artichoke hearts, garlic, and a golden mozzarella-Parmesan topping.
Instructions

Step 1
Heat the oven to 200°C. Coat the baking dish with 1 tsp (5 ml) olive oil.

Boil the pasta until about 2 minutes short of tender according to its package directions, then drain well.

Heat the remaining 2 tsp (10 ml) olive oil in the skillet over medium heat. Add the onion and cook until softened.

Add the garlic and cook over medium heat until fragrant.

Add the spinach in batches and stir over medium heat until wilted and excess moisture has evaporated.

Reduce to low heat. Stir in the cream cheese and milk until smooth, then add the salt, black pepper, and red pepper flakes.

Stir the artichoke hearts, 150 gr mozzarella, and 40 gr Parmesan into the sauce until evenly combined.

Fold the drained pasta into the prepared sauce, then transfer the mixture to the baking dish and spread it evenly.

Scatter the breadcrumbs, remaining 50 gr mozzarella, and remaining 20 gr Parmesan evenly over the pasta. Bake at 200°C until bubbling and golden on top.

Let the pasta rest before serving.
