Baked Parmesan Eggplant
Eggplant rounds coated with seasoned breadcrumbs and Parmesan, then oven-baked until crisp, golden, and tender.
Instructions

Step 1
Preheat the oven to 220°C.

Line two rimmed baking sheets with parchment paper.

Brush the lined sheets with 2 tsp (10 ml) olive oil.

Cut the eggplants crosswise into 1 cm rounds.

Combine the flour, salt, black pepper, and garlic powder in a shallow bowl.

Beat the eggs in a second shallow bowl until evenly blended.

Mix the breadcrumbs, Parmesan, and Italian seasoning in a third shallow bowl.

Coat each eggplant round first in the flour mixture, then in the beaten egg, and finally in the breadcrumb mixture. Arrange the rounds in a single layer on the prepared sheets.

Brush the tops of the coated eggplant rounds with the remaining 1 ¼ tbsp (20 ml) olive oil.

Bake at 220°C until the coating begins to brown, about 15 minutes.

Turn the rounds with tongs and bake at 220°C until both sides are golden and the centers are tender, about 10 minutes.

Rest the baked eggplant on the sheets for 5 minutes before serving.
