Vegetable and Lentil Stew
A hearty one-pot stew of brown lentils, tomatoes, potatoes, zucchini, kale, and aromatic vegetables in a savory broth.

Step 1
Set the large pot over medium heat and warm the olive oil.

Add the onion, carrot, and celery. Cook, stirring occasionally, until the onion softens.

Stir in the garlic, cumin, smoked paprika, and thyme. Cook until fragrant.

Add the tomato paste and cook, stirring, until it darkens slightly and coats the vegetables.

Add the lentils, tomatoes, vegetable stock, and bay leaves. Raise to high heat and bring to a boil.

Reduce to low heat, cover partially, and simmer the lentils.

Stir in the potatoes, cover partially, and continue simmering on low heat.

Stir in the zucchini and simmer uncovered on low heat until the lentils, potatoes, and zucchini are tender.

Add the kale and simmer until wilted and tender.

Remove the bay leaves. Stir in the lemon juice, salt, and black pepper, then remove the pot from the heat.
