Baked Falafel with Tahini Sauce
Herb-filled chickpea falafel baked until crisp and served with a creamy lemon-garlic tahini sauce.
Instructions

Step 1
Place the dried chickpeas in a mixing bowl, cover generously with cold water, and refrigerate while they soak.

Drain the soaked chickpeas in a colander and shake off as much surface water as possible.

Put the drained chickpeas, onion, 3 ¾ clove (12 gr) garlic, parsley, cilantro, cumin, coriander seed, 1 tsp (6 gr) salt, and black pepper in a food processor. Pulse until finely minced but still slightly granular.

Transfer the mixture to a mixing bowl and stir in the baking powder and chickpea flour. Rest the mixture so the flour can absorb moisture.

Preheat the oven to 200°C and coat a baking sheet with 2 tsp (10 ml) olive oil.

Firmly shape the mixture into 16 compact patties and arrange them on the baking sheet. Brush their tops with the remaining 1 ¼ tbsp (20 ml) olive oil.

Bake the falafel at 200°C until set and browned underneath.

Turn the falafel and continue baking until golden, firm, and at least 74°C at the center.

Whisk the tahini and lemon juice in a small bowl until thickened. Whisk in the water gradually, then add the remaining 1 ¼ clove (4 gr) garlic and remaining ¼ tsp (2 gr) salt.

Serve the baked falafel warm with the tahini sauce.
