Baked Falafel Pita
Oven-baked chickpea falafel tucked into warm pita with crisp vegetables and lemon-tahini sauce.
Instructions

Step 1
Place the dried chickpeas in a large bowl, add 930 ml water, cover, and refrigerate for at least 8 hours or overnight.

Heat the oven to 220°C. Line a rimmed baking sheet with parchment paper.

Drain the soaked chickpeas thoroughly in a colander.

Put the drained chickpeas, yellow onion, 3 ¾ clove (12 gr) garlic, parsley, cilantro, cumin, coriander, ⅞ tsp (5 gr) salt, and black pepper in a food processor. Pulse until finely chopped and cohesive but not pureed.

Add the flour and baking powder, then pulse briefly to combine. Let the mixture rest for 10 minutes.

Shape the mixture into 16 compact patties and arrange them on the prepared baking sheet. Coat both sides with the olive oil.

Bake for 15 minutes, then carefully turn each falafel with a spatula.

Bake until the falafel are browned and firm, about 10 minutes more.

Whisk the tahini, lemon juice, water, 1 ¼ clove (4 gr) garlic, and ⅛ tsp (1 gr) salt in a mixing bowl until smooth.

Warm the pita breads in the oven until pliable, about 3 minutes.

Prepare the tomatoes, cucumber, red onion, and romaine lettuce on a cutting board.

Open each warm pita and fill with four baked falafel, the prepared vegetables, and lemon-tahini sauce. Serve immediately.
