Turkish Sesame Bread Rings (Simit)
Crisp, deeply sesame-coated bread rings with a pleasantly chewy interior and a light grape-molasses glaze.
Instructions

Step 1
Combine 300 ml of the water at about 35°C with the yeast and sugar in a large mixing bowl.

Add the flour, salt, and olive oil. Mix until a rough dough forms.

Knead the dough until smooth, elastic, and slightly tacky.

Place the dough in the mixing bowl, cover it with a clean kitchen towel, and leave it until nearly doubled in volume.

Heat the oven to 220°C. Line two baking sheets with parchment paper.

Whisk the remaining 60 ml water with the grape molasses in a shallow bowl.

Spread the sesame seeds over a large plate.

Divide the risen dough into 8 equal portions. Split each portion in half, roll both halves into ropes, twist them together, and join the ends firmly to make a ring.

Dip each ring into the molasses mixture, coat it generously with sesame seeds, and place it on a prepared baking sheet.

Cover the shaped rings loosely with the kitchen towel and let them become slightly puffy.

Bake at 220°C until the rings are deeply golden brown and sound hollow when tapped underneath.
