Mercimek Köftesi
Classic Turkish meatless köfte made from tender red lentils, fine bulgur, sautéed onion, pepper and tomato pastes, fresh herbs, and lemon, shaped into small hand-formed portions.
Instructions

Step 1
Combine the rinsed lentils and water in the saucepan. Bring to a boil over high heat, then reduce to low heat and cook until the lentils are very soft and only a little liquid remains.

Remove the saucepan from the heat and stir in the bulgur. Cover and let it stand until the bulgur absorbs the remaining moisture and becomes tender.

Meanwhile, heat the olive oil in the skillet over medium heat. Add the onion and cook, stirring regularly, until soft and translucent.

Add the tomato paste and red pepper paste to the onion. Cook over low heat, stirring, until evenly combined and aromatic.

Transfer the lentil-bulgur mixture to the mixing bowl. Add the onion mixture, cumin, Aleppo pepper, salt, and black pepper; mix thoroughly, then leave it to cool until comfortable to handle.

Add the scallions, parsley, and lemon juice. Knead by hand until the mixture is uniform and holds together when pressed.

Divide the mixture into 24 portions. Squeeze each portion gently in one hand to form the traditional ridged, oblong shape.

Arrange the lettuce leaves on the platter and place the shaped köfte on top. Serve at room temperature or chilled.
