Sweet Potato Pancakes

Fluffy pancakes made with sweet potato puree, creating a slightly sweet breakfast treat that’s also filling.

Instructions

  1. Step 1

    Heat the skillet over medium-low heat for 3 minutes while preparing the batter.

    In the mixing bowl, whisk the sweet potato, milk, and lightly beaten egg until smooth and evenly combined.

    Add the all-purpose flour, baking powder, ground cinnamon, and salt to the bowl, then fold with the spatula just until no dry flour remains; do not overmix.

  4. Step 4

    Melt the butter in the 28 cm skillet, using 7.5 gr to grease each of four pancake spots, then spoon the batter into four pancakes. Cook over medium heat for 2–3 minutes, until bubbles form and the edges look set, flip with the spatula, and cook another 2–3 minutes until the centers are set and no wet batter remains.

    After the skillet is emptied, wash and dry the mixing bowl, then transfer the cooked pancakes into it for serving.
