Sweet Potato and Black Bean Salad
A hearty salad of roasted spiced sweet potatoes, black beans, corn, crisp vegetables, avocado, and cilantro in a bright lime dressing.
Instructions

Step 1
Heat the oven to 220°C and place a rimmed baking sheet in the oven to warm.

Peel the sweet potatoes and cut them into even 2 cm cubes.

In a large mixing bowl, toss the sweet potatoes with 1 tbsp (15 ml) olive oil, ⅝ tsp (3 gr) salt, ground cumin, smoked paprika, and black pepper.

Spread the seasoned sweet potatoes in one layer on the hot baking sheet. Roast at 220°C until tender and browned, turning once halfway through.

Rinse the black beans in a colander and drain thoroughly. Prepare the corn, bell pepper, and red onion, then combine them with the beans in the large mixing bowl.

Mince the garlic. In a small bowl, whisk it with the lime juice, the remaining 2 tbsp (30 ml) olive oil, and the remaining ⅜ tsp (2 gr) salt.

Remove the roasted sweet potatoes from the oven and let them cool on the baking sheet until warm rather than piping hot.

Add the warm sweet potatoes and lime dressing to the bean mixture. Toss gently until evenly coated.

Dice the avocados and chop the cilantro. Fold both gently into the salad and serve.
