Spinach and Feta Puffs
Flaky puff pastry parcels filled with spinach, feta, onion, garlic, and dill, baked until crisp and golden.
Instructions

Step 1
Preheat the oven to 200°C. Line a baking sheet with parchment paper.

Heat the olive oil in a frying pan over medium heat. Add the onion and cook until softened.

Add the garlic and cook until fragrant.

Add the spinach and cook over medium heat, stirring, until completely wilted.

Transfer the spinach mixture to a colander and let it cool slightly. Press out as much liquid as possible, then chop the mixture.

Place the spinach mixture in a mixing bowl. Stir in the feta, dill, black pepper, nutmeg, and 1 egg until evenly combined.

Unfold the cold puff pastry on a cutting board and cut it into 12 equal squares.

Divide the filling among the pastry squares. Fold each square into a triangle or rectangle, press out excess air, and crimp the edges closed with a fork. Arrange the parcels on the prepared baking sheet.

Brush the tops with the remaining 1 egg and cut a small steam vent in each puff.

Bake at 200°C until deeply golden, crisp, and at least 74°C in the center.

Let the puffs rest on the baking sheet before serving warm.
