Spaghetti Squash Breakfast Bowl
Roasted spaghetti squash topped with sautéed vegetables, a fried egg, Cheddar, and avocado for a hearty savory breakfast.

Step 1
Preheat the oven to 200°C.

Brush the cut sides of the spaghetti squash with 1 ¼ tbsp (20 ml) olive oil, then season with ⅜ tsp (2 gr) salt and 0.5 gr black pepper. Place cut-side down on the baking sheet.

Roast until the shell yields when pressed and the flesh separates easily into strands.

Let the squash cool briefly, then scrape the flesh into strands with a fork and divide it among four serving bowls.

Heat 1 tbsp (15 ml) olive oil in the skillet over medium heat. Add the onion, bell pepper, ⅜ tsp (2 gr) salt, and 0.5 gr black pepper; cook until softened.

Add the garlic and spinach. Cook until the garlic is fragrant and the spinach has wilted, then divide the vegetables among the bowls.

Return the skillet to medium heat and add 2 tsp (10 ml) olive oil. Crack in the eggs, season with ⅜ tsp (2 gr) salt and 1 gr black pepper, and cook until the whites and yolks are set and the centers reach 71°C.

Top each bowl with one egg, then divide the Cheddar and avocado evenly among the bowls. Serve immediately.
