Baked Avocado Eggs

Ripe avocado halves filled with eggs, seasoned simply, and baked until the whites are set.

Instructions

  1. Step 1

    Preheat the oven to 200°C.

  2. Step 2

    Coat the baking dish lightly with olive oil.

    Ingredients used: 5.0 ml Olive Oil

  3. Step 3

    Halve and pit the avocados. Scoop out enough flesh from each half to make room for an egg, finely chop the scooped flesh, and reserve it. Arrange the halves level in the baking dish.

  4. Step 4

    Crack each egg into the small bowl, then slide one egg into each avocado half.

  5. Step 5

    Season the filled avocado halves with salt and ground black pepper.

    Ingredients used: 0.5 gr Ground Black Pepper, 1.5 gr Salt

  6. Step 6

    Bake until the egg whites are set and the centers reach 71°C, 15 to 18 minutes.

    Timer: 15 min (fixed)

  7. Step 7

    Top with the chopped chives and reserved avocado flesh, then serve warm.
