Baked Eggs in Avocado

Ripe avocado halves filled with eggs, seasoned, and baked until the whites are set and the yolks reach the desired doneness.

Instructions

  1. Step 1

    Heat the oven to 220°C. Halve and pit the avocados, then scoop out enough flesh from each center to make room for a small egg; reserve the scooped flesh for another use.

    Ingredients used: 2.0 piece Avocado

    Cookware: Chef Knife, cutting board, oven, spoon

  2. Step 2

    Arrange the avocado halves cut-side up in a baking dish so they cannot tip. Brush the cut surfaces and cavities with olive oil.

    Ingredients used: 5.0 ml Olive Oil

  3. Step 3

    Crack each egg into a small bowl, then slide it into an avocado cavity. Season with the salt and black pepper.

    Ingredients used: 0.5 gr Black Pepper, 4.0 piece Egg, 1.5 gr Salt

  4. Step 4

    Bake for 12 minutes, then check the eggs. Continue baking for up to 3 minutes if needed, until the whites are set and the yolks reach the preferred doneness.

    Sprinkle with the chives and serve immediately.
