Shrimp Scampi Linguine
Linguine and tender shrimp tossed in a buttery garlic, white wine, lemon, and parsley sauce.
Instructions

Step 1
Bring the water to a boil in a large pot over high heat. Add 1 ¼ tsp (7 gr) salt.

Add the linguine and cook until about 1 minute shy of al dente. Reserve some cooking water, then drain the pasta.

Pat the shrimp dry, then season with ⅜ tsp (2 gr) salt and the black pepper.

Heat 2 tbsp (30 ml) olive oil in a large skillet over medium heat. Cook the shrimp, turning once, until opaque and firm, then transfer them to a clean plate.

Add the remaining 1 tbsp (15 ml) olive oil to the skillet over medium heat. Stir in the garlic and red pepper flakes until fragrant.

Pour in the white wine and simmer over medium heat until reduced by roughly half.

Reduce to low heat. Add the butter, prepared lemon zest and juice, and 4 tbsp (15 gr) parsley, stirring until the butter forms a smooth sauce.

Add the drained linguine and cooked shrimp to the skillet. Toss over low heat, adding reserved cooking water gradually until the sauce lightly coats the pasta.

Remove from the heat, garnish with the remaining 1 ¼ tbsp (5 gr) parsley, and serve immediately.
