Shrimp and Egg Breakfast Bowl
A savory breakfast bowl of creamy cheddar grits topped with seasoned shrimp, wilted spinach, fried eggs, and scallions.
Instructions

Step 1
Combine the water, milk, and ⅜ tsp (2 gr) salt in the saucepan. Bring to a gentle simmer over medium heat.

Gradually whisk in the grits. Reduce to low heat and cook, whisking frequently, until thick and tender.

Remove the grits from the heat. Stir in the cheddar, butter, and 1 gr black pepper until smooth, then cover to keep warm.

Pat the shrimp dry in the mixing bowl. Toss with the garlic, paprika, salt, and 1 gr black pepper.

Heat 2 tsp (10 ml) olive oil in the skillet over medium heat. Add the seasoned shrimp and cook, turning once, until opaque and the centers reach 63°C, then transfer them to a clean plate.

Add the spinach to the same skillet over medium heat and cook until just wilted.

Transfer the spinach to the shrimp plate. Heat the remaining 2 tsp (10 ml) olive oil in the skillet over medium heat, crack in the eggs, and season with the remaining ¼ tsp (1 gr) salt. Cook until the whites and yolks are set, or until the centers reach 71°C.

Divide the grits between two bowls. Top each with spinach, shrimp, an egg, and the sliced scallions, then serve immediately.
