Seared Scallops with Pea Puree

Golden, tender sea scallops served over a smooth pea puree brightened with lemon and balanced with butter and shallot.

Instructions

  1. Step 1

    Melt 2 tbsp (30 gr) of the butter in the saucepan over medium heat. Add the shallot and cook for 3 minutes, then add the garlic and cook for 30 seconds.

    Ingredients used: 4.0 gr Garlic, 60.0 gr Shallot, 30.0 gr Unsalted Butter

  2. Step 2

    Add the peas, vegetable stock, and ⅜ tsp (2 gr) of the salt. Bring to a simmer over medium heat and cook until the peas are tender.

    Timer: 4 min (fixed)

    Ingredients used: 400.0 gr Green Pea, 2.0 gr Salt, 120.0 ml Vegetable Stock

  3. Step 3

    Transfer the pea mixture to the blender. Add 2 tsp (10 ml) of the lemon juice and 1 gr of the black pepper, then blend until smooth.

  4. Step 4

    Return the puree to the saucepan and keep it warm over low heat while cooking the scallops.

  5. Step 5

    Arrange the dry scallops on a plate and season them with the remaining ⅝ tsp (3 gr) salt and 1 gr black pepper.

  6. Step 6

    Heat the olive oil in the large skillet over high heat. Add the prepared scallops in one uncrowded layer and sear without moving them until deeply golden underneath.

    Timer: 2 min (fixed)

    Ingredients used: 15.0 ml Olive Oil

  7. Step 7

    Turn the scallops and add the remaining 1 ½ tbsp (20 gr) butter. Cook until the second side is golden and the centers reach 63°C.

    Ingredients used: 20.0 gr Unsalted Butter

    Cookware: instant-read thermometer, large skillet, tongs

  8. Step 8

    Remove the skillet from the heat and add the remaining 2 tsp (10 ml) lemon juice. Divide the warm pea puree among four plates and arrange the scallops on top.
