Seafood Gumbo
A Louisiana-style seafood gumbo with a dark roux, okra, aromatic vegetables, shrimp, crab, and oysters, finished with filé powder and served over rice.
Instructions

Step 1
Combine the rice, water, and 4 gr of the salt in the saucepan. Bring to a simmer over medium heat, cover, reduce to low heat, and cook until the water is absorbed; remove from the heat and rest covered.

Heat the vegetable oil in the heavy pot over medium heat. Whisk in the flour and cook, stirring continuously, until the roux is smooth and dark brown.

Add the onion, celery, bell pepper, and okra to the roux. Cook over medium heat, stirring often, until the vegetables begin to soften.

Stir in the garlic, thyme, cayenne pepper, and black pepper. Cook over medium heat until fragrant.

Gradually whisk in the warm seafood stock until smooth. Add the Worcestershire sauce, bay leaves, and remaining 8 gr salt.

Bring the gumbo to a gentle simmer over medium heat, then reduce to low heat and cook uncovered, stirring occasionally.

Add the shrimp, crab meat, and oysters. Simmer gently over low heat until the shrimp are opaque and the seafood reaches 63°C.

Remove the pot from the heat and discard the bay leaves. Stir in the filé powder, green onion, and parsley.

Let the gumbo stand briefly, then ladle it into serving bowls over the cooked rice.
