BBQ Chicken Thighs with Coleslaw
Grilled, barbecue-glazed chicken thighs served with a crisp, creamy cabbage and carrot coleslaw.

Step 1
Preheat the grill to medium heat and arrange it with direct and indirect cooking zones.

Pat the chicken dry. Rub it with the vegetable oil, 1 tsp (6 gr) salt, 1 gr black pepper, smoked paprika, and garlic powder.

Place the thighs skin-side down over direct heat. Grill for 5 minutes, then turn and grill the other side for 3 minutes.

Move the thighs to the indirect zone with the skin facing up. Cover and cook for 20 minutes.

Whisk the mayonnaise, apple cider vinegar, sugar, Dijon mustard, remaining ½ tsp (3 gr) salt, and remaining 1 gr black pepper until smooth.

Combine the cabbage and carrot in a large bowl. Add the dressing and toss until evenly coated.

Brush the chicken with ¾ cup (180 ml) barbecue sauce. Continue cooking over indirect heat, covered, turning and brushing occasionally, until the thickest part reaches at least 74°C.

Transfer the chicken from the grill and let it rest for 5 minutes.

Serve the rested chicken with the coleslaw and the remaining 4 tbsp (60 ml) barbecue sauce.
