Smothered Chicken with Cheese
Pan-seared chicken breasts finished in a savory onion-mushroom cream gravy and topped with melted cheddar cheese.

Step 1
Season the chicken on both sides with the paprika, ¾ tsp (4 gr) of the salt, and 1 gr of the black pepper.

Heat the olive oil in a large skillet over medium heat. Sear the seasoned chicken for about 4 minutes per side, then transfer it to a clean plate.

Melt the butter in the same skillet over medium heat. Add the onion, mushrooms, remaining ¼ tsp (1 gr) salt, and remaining 1 gr black pepper; cook until softened and lightly browned.

Add the garlic and cook over medium heat until fragrant.

Sprinkle in the flour and stir over medium heat until it coats the vegetables and loses its raw appearance.

Gradually whisk in the chicken broth, then add the cream and Worcestershire sauce. Bring the gravy to a gentle simmer over medium heat and cook until slightly thickened.

Return the seared chicken and any collected juices to the skillet. Spoon gravy over the chicken, cover, and simmer over low heat until the thickest part of each breast reaches 74°C.

Scatter the cheddar over the chicken, cover, and cook over low heat until the cheese melts. Serve the chicken with the onion-mushroom gravy spooned over it.
