Savory Sweet Potato Tacos
Roasted, warmly spiced sweet potatoes and black beans served in corn tortillas with crisp lime slaw, avocado, and sour cream.

Step 1
Preheat the oven to 220°C and place a rimmed baking sheet inside to heat.

Peel the sweet potatoes and cut them into even 2 cm cubes.

In the mixing bowl, toss the sweet potatoes with the olive oil, cumin, smoked paprika, chili powder, salt, and black pepper. Carefully spread them in one layer on the hot baking sheet.

Roast the sweet potatoes for 25 minutes, turning them halfway through, until tender and browned at the edges.

Combine the cabbage, red onion, cilantro, juice from one lime, and the remaining ⅜ tsp (2 gr) salt in the mixing bowl. Toss well and set aside.

Place the black beans and water in the saucepan. Cook over medium heat for 5 minutes, stirring occasionally, until hot; drain any water that remains.

Warm the tortillas in batches in a dry skillet over medium heat, about 30 seconds per side, until flexible. Stack them to keep warm.

Halve, pit, and slice the avocados, then cut the remaining lime into wedges. Fill the warm tortillas with roasted sweet potatoes, black beans, slaw, avocado, and sour cream; serve with the lime wedges.
