Chili Sin Carne

A hearty meat-free chili with kidney beans, black beans, tomatoes, vegetables, and warm spices.

Instructions

  1. Step 1

    Prepare the diced onion, bell peppers, and carrots, then mince the garlic.

  2. Step 2

    Heat the olive oil in a large pot over medium heat. Add the onion, bell peppers, and carrots and cook, stirring occasionally, until softened.

  3. Step 3

    Add the garlic and cook over medium heat until fragrant.

    Stir in the tomato paste, cumin, chili powder, smoked paprika, and oregano. Cook over medium heat, stirring continuously.

  5. Step 5

    Drain and rinse the kidney beans and black beans in a colander. Add them to the pot with the tomatoes and vegetable broth, then stir well.

    Increase to high heat and bring the chili to a boil, stirring occasionally.
