Savory Spinach Potato Cakes
Crisp pan-fried potato cakes filled with spinach, onion, garlic, Parmesan, and savory seasonings.

Place the spinach in a skillet over medium heat and cook, stirring, until wilted.

Transfer the spinach to a colander. Let it cool briefly, squeeze out as much liquid as possible, and chop it.

Place the potatoes in a pot, cover with cold water, and bring to a boil. Reduce to medium heat and cook until easily pierced with a knife.

Drain the potatoes thoroughly, return them to the pot, and mash until smooth. Let them release steam for a few minutes.

Heat 1 tbsp (15 ml) vegetable oil in the skillet over medium heat. Cook the onion until softened, then add the garlic and cook until fragrant.

Combine the mashed potatoes, prepared spinach, and onion mixture in a mixing bowl. Stir in the egg, Parmesan, breadcrumbs, flour, salt, black pepper, and nutmeg until evenly incorporated.

Divide the mixture into eight equal portions and shape each into a compact cake about 2 cm thick.

Heat the remaining 2 tbsp (30 ml) vegetable oil in the skillet over medium heat. Fry the cakes in batches until deep golden on both sides and the centers reach 74°C, turning once.
