Place the shrimp in a mixing bowl and toss with the paprika, cayenne, black pepper, and the allocated salt.

Combine the water, whole milk, and allocated salt in a medium saucepan. Bring just to a simmer over medium heat.

Whisk in the grits gradually. Reduce to low heat and cook, stirring often, until tender and creamy.

Remove the grits from the heat. Stir in the allocated butter and cheddar until smooth, then cover to keep warm.

Cook the bacon in a large skillet over medium heat until crisp. Transfer it to a plate with a slotted spoon, leaving a thin coating of rendered fat in the skillet.

Add the seasoned shrimp to the skillet in one layer. Cook over medium heat, turning once, until opaque and the centers reach 63°C, then transfer to the plate.

Add the garlic to the skillet and stir over medium heat until fragrant. Pour in the chicken stock and Worcestershire sauce, scrape up the browned bits, and simmer until slightly reduced.

Remove the skillet from the heat and stir in the remaining butter and lemon juice. Fold in the cooked shrimp and bacon until coated and warmed through.
