BBQ Ribs with Homemade Sauce
Tender oven-cooked pork ribs finished under the broiler with a tangy, smoky homemade barbecue sauce.
Instructions
-
Step 1
Heat the oven to 150°C. Set a wire rack inside a rimmed baking sheet.
-
Step 2
Turn the ribs bone-side up. Loosen the thin membrane with a knife, grip it, and pull it away from each rack.
-
Step 3
Combine the salt, black pepper, and smoked paprika in a small bowl.
-
Step 4
Rub the seasoning evenly over both sides of the ribs. Arrange them meat-side up on the wire rack and cover the baking sheet tightly with aluminum foil.
-
Step 5
Bake until the meat is tender and has pulled back slightly from the bones, 2 hours 45 minutes to 3 hours.
-
Step 6
While the ribs bake, whisk the ketchup, vinegar, brown sugar, molasses, Worcestershire sauce, mustard, and garlic together in a saucepan.
-
Step 7
Bring the sauce to a gentle simmer over medium heat, then reduce to low heat and cook until glossy and slightly thickened.
-
Step 8
Transfer half of the sauce to a clean serving bowl. Set the oven to broil and uncover the ribs.
-
Step 9
Brush the ribs generously with the sauce left in the saucepan. Broil until caramelized at the edges, watching continuously.
-
Step 10
Rest the ribs, then cut between the bones and serve with the reserved sauce.

Food safety
Caution: moderate
Prevent cross-contamination from raw pork. Cook the ribs until tender and at least 63°C internally, then rest before cutting; ribs typically become tender at a substantially higher internal temperature.
Risk factors
- handling raw pork
- hot rendered fat and steam
- rapidly burning sugary sauce under the broiler
