Savory Basil Chicken
Pan-seared chicken breasts finished in a savory garlic, lemon, butter, and fresh basil pan sauce.
Instructions

Step 1
Pound the chicken to an even thickness on the cutting board. Pat it dry, then season both sides with ⅝ tsp (4 gr) salt and ¼ tsp (0.5 gr) black pepper.

Heat 1 tbsp (15 ml) olive oil in the skillet over medium heat. Add the chicken and cook, turning once, until browned and the thickest part reaches 74°C; transfer it to a clean plate.

Finely chop the onion. Add the remaining 1 tbsp (15 ml) olive oil and the onion to the skillet, then cook over medium heat until softened.

Mince the garlic, add it to the skillet, and stir over medium heat until fragrant.

Pour in the chicken stock and lemon juice. Add the remaining ⅜ tsp (2 gr) salt and ¼ tsp (0.5 gr) black pepper, scrape up the browned bits, and simmer over medium heat until slightly reduced.

Reduce to low heat and stir in the cold butter until the sauce is glossy. Tear and fold in the basil just until wilted.

Return the chicken and any accumulated juices to the skillet. Turn the chicken in the sauce and warm through over low heat before serving.
