Roasted Turkey Breast with Herbs

Bone-in turkey breast roasted with a lemon, garlic, and fresh herb butter until golden and juicy.

Instructions

  1. Step 1

    Heat the oven to 190°C. Fit the roasting rack inside the roasting pan.

  2. Step 2

    Set the turkey breast on the cutting board, pat it dry, and gently loosen the skin from the meat without tearing it.

  3. Step 3

    Mix the softened butter with the garlic, rosemary, thyme, sage, lemon zest and juice, salt, and black pepper. Spread some beneath the loosened skin and rub the remainder over the outside.

    Ingredients used: 2.0 gr Black Pepper, 60.0 gr Butter, 12.0 gr Garlic, 1.0 piece Lemon, 4.0 gr Rosemary, 3.0 gr Sage, 12.0 gr Salt, 3.0 gr Thyme

  4. Step 4

    Place the turkey skin-side up on the rack and pour the chicken stock into the roasting pan. Roast at 190°C for 75 minutes.

    Timer: 75 min (fixed)

  5. Step 5

    Check the thickest part of the breast without touching bone. Continue roasting until it reaches 74°C, usually 10 to 25 minutes longer.

  6. Step 6

    Transfer the turkey to a clean cutting board and let it rest for 20 minutes.

    Slice the breast meat across the grain and serve with the pan juices.
