Roasted Pork Belly with Garlic
Slow-roasted pork belly with a savory garlic crust, tender meat, and crisp golden skin.

Step 1
Heat the oven to 160°C. Set a wire rack inside a roasting pan.

Pat the pork belly dry. Place it skin-side up on a cutting board and score the skin at 1 cm intervals without cutting into the meat.

Mix the garlic, olive oil, black pepper, and part of the salt into a paste.

Turn the pork skin-side down and rub the garlic paste over the meat and sides, keeping the skin clean. Return it skin-side up to the rack.

Rub the remaining salt evenly into the scored skin.

Roast for about 2 hours, until the meat is tender and its center reaches about 90°C.

Increase the oven temperature to 230°C and roast until the skin is deeply browned and crisp.

Transfer the pork belly to a clean cutting board and rest it uncovered. Slice along the score lines and serve.
